How to make tomato rice with basmati rice in pressure cooker
Tomato Rice – This one pot tomato rice recipe is a delicious, flavorful and easy to make dish cooked with long grain basmati rice. This recipe is a common one in Tamilnadu homes and usually made with normal parboiled cooking rice / ponni / sona masuri rice. Using basmati rice gives a unique flavour to the traditional recipe.
This is a simple one pot rice recipe which is an excellent choice for lunch box. It goes well with onion raita, papad, pickle and a dollop of ghee on the top.
Cooking instructions with step by step pictures
Wash and soak the rice.
Heat oil in a pressure cooker and add the whole spices including cinnamon, cardamom, clove and star anise.
Once they sizzle, add chopped onions and green chillies.
When the onions turn translucent, add ginger garlic paste and saute till the raw smell of ginger garlic paste goes off.
Now add chopped tomatoes and saute for a minute.
Add turmeric powder, red chilli powder and garam masala. Mix well.
Saute till the tomatoes are mushy and cooked thoroughly.
Now add chopped coriander leaves and mix well.
Add the soaked and drained rice and saute for a few seconds.
Now add water and close the pressure cooker. Cook on high flame for 2 whistles and let the pressure release naturally.
Open the pressure cooker and fluff the rice gently.
Serve hot or warm.

- 3 L Pressure cooker
Ingredients
- 3 tbsp oil or 2 tbsp oil + 1 tbsp ghee
- 3 one inch cinnamon sticks
- 3 cloves
- 2 cardamom
- 1 star anise
- 1 medium sized onion
- 3 green chillies
- 1 tbsp ginger garlic paste
- 4 medium sized tomatoes
- ¼ tsp turmeric powder
- ¾ tsp red chilli powder can increase upto 1 tsp
- ½ tsp garam masala
- ¼ cup chopped coriander leaves
- 1 cup basmati rice
- 1 ½ cups water
- Salt to taste

Notes
- Wash the rice twice in water carefully so that the rice does not break.
- Soak the rice at least for 20 minutes so that the excess surface starches are removed. It helps in preparing non sticky rice.
- You can also cook this tomato rice in a pan or an instant pot.
- You can also add mint leaves along with coriander leaves to enhance the flavour.
