Lotus seeds / Makhana / Phool Makhana are great sources of micronutrients, calcium and proteins. They are low in cholesterol and saturated fat. The high nutrient content of makhana makes them a good snacking option. And everyone craves for a dessert. Why not make a healthy one?
Ingredients
- 4 cups full fat milk
- 1 cup Makhana seeds
- 1 cup sugar ( can increase or decrease according to preference)
- ¼ cup mixed nuts ( cashews, almonds, chironji seeds, raisins)
- ½ tsp cardamom powder
- 2 tbsp ghee

Cooking Instructions
- Add milk to a pan and bring it to boil. Keep boiling till it has reduced to half. Stir in intervals to avoid scorching at the bottom.
- Meanwhile heat a pan and add 2tbsp of ghee. Add the mixed nuts and shallow fry them till golden brown. Take care not to burn them. Set them aside.
- In the same pan add the makhanas and fry them in medium heat till they become crispy.
- Take half of the makhanas and grind them coarsely in a blender.
- Once the milk has reduced to half add the fried makhanas and ground makhanas to the milk.
- Add sugar and cardamom powder and cook for 10 mins in low flame.
- Add the fried nuts and mix well.
- Serve warm or chilled.

Recipe Notes
- Makhanas take approximately 5 mins in low flame to become crispy.
- White sugar can be substituted with jaggery or brown sugar.
- Nuts and dried fruits can be added based on the preference.
- A pinch of saffron can also be added.
