Ingredients
- 2 medium sized bitter gourd
- 1 tbsp rock salt + table salt to taste
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 sprig curry leaves
- 1/8 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp coriander powder
Cooking instructions
- Peel the bitter gourd and chop into fine cubes. Add water in a bowl and add 1 tbsp rock salt. Soak the bitter gourd pieces in salt water for about 15 mins.
- Heat oil in a pan, preferably non-stick and add mustard seeds. Once the mustard seeds crackle add cumin seeds and curry leaves.
- Then drain the bitter gourd and add into the pan and saute for 15 minutes on low flame.
- After 15 minutes you can see that the bitter gourd pieces have shrunk considerably. At this stage add turmeric powder, red chilli powder and coriander powder.
- Mix well and keep stirring in intervals for 10 more minutes.
- When you see that the bitter gourd is browned and feel weightless while sauteing switch off the stove.
- Serve with rasam / curd rice!!
